Preheat your oven to 400°F (200°C).
In a large bowl, toss the potato chunks with olive oil, kosher salt, black pepper, and paprika until evenly coated.
Spread the potatoes in a single layer on a baking sheet.
Roast potatoes for 20 minutes.
Meanwhile, season chicken breasts with salt, pepper, and a bit of paprika if desired.
After 20 minutes, add the chicken breasts to the baking sheet with the potatoes.
Roast everything together for another 20-25 minutes or until the chicken is cooked through and potatoes are golden and crispy.
Optionally, sprinkle freshly grated Parmesan over the potatoes and chicken during the last 5 minutes of baking.
Remove from oven and let rest for a few minutes before serving.
