Line a baking sheet with parchment paper or foil. Lay out the Ritz crackers in a single layer on the sheet.
Make the Caramel:
In a medium saucepan, combine the brown sugar, butter, and corn syrup. Cook over medium heat, stirring constantly until the mixture comes to a boil. Let it boil for 3 minutes without stirring.
Assemble:
Immediately pour the hot caramel evenly over the crackers, spreading it out gently with a spatula to cover all crackers.
Add Peanuts:
Sprinkle the roasted peanuts evenly over the caramel layer, pressing them lightly so they stick.
Cool and Set:
Let the cookies cool at room temperature until the caramel hardens (about 1-2 hours). For faster setting, place in the fridge.
Serve:
Break into pieces and enjoy!
