Crispy Cheesy Stuffed Potato Frittata

Peel and boil the potatoes until tender. Mash them well.

Mix the mashed potatoes with flour, salt, paprika, and black pepper to create a thick dough.

Peel and finely chop the onion and carrot.

In a pan, heat olive oil and sauté the onion and carrot until soft.

Add the ground beef, season with salt, pepper, and Italian herbs, and cook until browned and cooked through. Set aside.

In a separate bowl, beat the eggs with a pinch of salt and pepper.

Spread half of the potato mixture in a greased oven-safe pan, pressing down evenly.

Layer the cooked ground beef mixture over the potato base.

Sprinkle the grated cheese on top of the beef.

Cover with the remaining potato mixture and smooth the surface.

Pour the beaten eggs evenly over the top.

Bake in a preheated oven at 180°C (350°F) for about 30-35 minutes, or until golden and set.

Garnish with chopped green onions before serving.
