Preheat & Prepare Potatoes
Preheat oven to 180°C (350°F).
Peel and grate the potatoes (you can also thinly slice them if preferred). Place in a bowl and pat dry with a towel to remove excess moisture.
Boil the Eggs
Place the eggs in boiling water and cook for 10 minutes.
Peel and chop into small pieces.
Mix the Sauce
In a separate bowl, mix sour cream, mayonnaise, soy sauce, milk, melted butter, minced garlic, salt, and pepper until smooth.
Combine Everything
In a large bowl, mix grated potatoes, chopped eggs, diced ham, spring onions, and most of the cheese (reserve a handful for topping).
Pour the sauce over the mixture and stir well to combine.
Bake
Transfer everything into a greased baking dish.
Top with the remaining cheese.
Bake for 30–35 minutes, or until golden brown and bubbling.
