Blend the base:
In a blender or food processor, combine bananas, eggs, rolled oats, cinnamon, baking powder, and salt.
Blend until smooth and well combined. The batter should be pourable but thick.
Heat the pan:
Preheat a non-stick skillet or griddle over medium heat. Lightly grease with a small amount of oil or butter.
Cook the pancakes:
Pour small portions of batter onto the pan to form pancakes.
Cook for about 2–3 minutes on each side, or until bubbles appear on the surface and the edges set. Flip carefully and cook the other side until golden brown.
Serve warm:
Stack the pancakes on a plate and serve with your favorite toppings.
