Chitterlings—affectionately called "chitlins"—are a classic Southern dish made from cleaned pig intestines, slow-cooked until tender with aromatic spices. It’s a recipe rooted in tradition, often served during holidays or family gatherings. When properly cleaned and seasoned, they are deeply flavorful and rich in history.

Ingredients:
5 pounds (2.25 kg) of chitterlings (cleaned thoroughly)

1 large onion, finely chopped

4 cloves of garlic, minced

1 tablespoon salt

1 teaspoon black pepper

1 teaspoon crushed red pepper flakes (optional)

2 bay leaves

1 tablespoon white vinegar

Water for boiling
