Prepare the steak by cutting it into bite-sized pieces. Peel and thinly slice the potatoes. Dice the onion.
In the slow cooker, layer half of the potatoes, then half of the steak, followed by half of the onions. Sprinkle half of the shredded cheddar cheese over the top.
Repeat the layers with the remaining potatoes, steak, onions, and cheese.
Cover the slow cooker and cook on low for 6–7 hours or on high for 3–4 hours, until potatoes are tender and steak is fully cooked.
Once cooked, gently stir to slightly mix the layers before serving.
