Stuffed Bell Peppers

Cut the tops off the peppers and remove seeds.

In a bowl, mix ground meat, rice, onion, tomato sauce, and seasonings.

Stuff each pepper with the mixture and place in the slow cooker.

Cover and cook on low for 6 hours or high for 3–4 hours.

In the last 15 minutes, sprinkle cheese over the top if desired.

Taco Spaghetti Squash

Cut the spaghetti squash in half, remove seeds, and place cut-side down in the slow cooker with ½ cup water.

Cook on high for 2–3 hours or low for 4–5 hours.

Meanwhile, cook the ground beef with taco seasoning in a skillet. Add salsa, beans, and corn.

Once the squash is tender, scrape out the strands with a fork and mix with the taco filling.

Serve warm, garnished with fresh cilantro.
