Peel and grate the potatoes. Squeeze out excess water.
In a bowl, mix grated potatoes with chopped onion, eggs, milk, salt, pepper, oregano, and flour until well combined.
Heat vegetable oil in a frying pan over medium heat.
Pour a small amount of batter to form pancakes and cook until golden brown on both sides.
Prepare your mushroom filling separately (recipe not included here).
Serve pancakes hot with the mushroom filling inside or on the side.
