Quick Vegetable Casserole (Ready in 10 Minutes!)

Preheat the oven to 200°C (390°F). Grease a baking dish with oil.

In a large bowl, whisk the eggs, yogurt, and flour until smooth.

Add the grated potatoes, zucchini, chopped onion, diced tomatoes, spring onion, and 100 g cheese. Mix well.

Season with salt, pepper, and your favorite herbs (optional).

Pour the mixture into the baking dish and spread evenly.

Top with 3 tablespoons of cheese.

Bake for 35–40 minutes or until golden brown and set.

Let it cool slightly before slicing and serving.
