Preheat the oven to 180°C (350°F).
Chop the zucchini, onion, carrot, and peppers into small pieces.
In a large bowl, whisk the eggs and milk together.
Add the chopped vegetables, flour, baking powder, and salt to the bowl. Mix until well combined.
Stir in the chopped parsley and shredded mozzarella cheese.
Drizzle olive oil in a baking dish and pour in the mixture.
Bake for about 40 minutes or until the top is golden and the zucchini is tender.
Let it cool slightly before serving.
