Gradually add the powdered sugar, mixing until fully combined and dough-like.
Shape the mixture into small balls (about 1 inch diameter) and place them on a baking sheet lined with parchment paper.
Melt the chocolate chips in a microwave or double boiler until smooth.
Dip each peanut butter ball into the melted chocolate, coating fully, then place back on the parchment.
Refrigerate for at least 1 hour until the chocolate hardens.
