Preheat your oven to 200°C (400°F). Line a baking sheet with parchment paper.
Prepare the puff pastry:
On a lightly floured surface, roll out the puff pastry sheet if needed and cut it into 4 equal squares.
Add fillings:
Optional: Spread a thin layer of Dijon mustard or mayonnaise on each square.
Place a portion of ham and grated cheese in the center of each square. Sprinkle black pepper to taste.
Seal the pockets:
Fold each square over diagonally to form a triangle. Press the edges firmly with a fork to seal.
Apply egg wash:
Brush the top of each pocket with the beaten egg for a golden finish.
Bake:
Place the pockets on the prepared baking sheet. Bake for 15-20 minutes or until puffed and golden brown.
Serve:
Let cool slightly before serving.
