Grilled Shrimp Caesar Wraps

In a bowl, mix olive oil, garlic, lemon juice, paprika, salt, and pepper. Add shrimp and toss to coat.

Grill the shrimp:
Preheat grill or grill pan over medium heat. Cook shrimp 2-3 minutes per side until pink and cooked through.

Make the Caesar dressing:
In a small bowl, whisk together mayonnaise, Parmesan, lemon juice, and Dijon mustard until smooth.

Assemble the wraps:
Lay tortillas flat. Spread a generous amount of Caesar dressing on each. Add romaine lettuce, grilled shrimp, and optional cherry tomatoes.

Wrap and serve:
Roll tortillas tightly and slice in half if desired. Serve immediately.
