Prepare the potatoes:
Boil the potatoes in salted water until tender (about 15 minutes). Drain and place on a baking sheet. Using a fork or potato masher, gently smash each potato to flatten slightly.
Add cheese and butter:
Sprinkle shredded cheddar cheese over the smashed potatoes. Dot with butter and season with salt and pepper. Bake in a preheated oven at 425°F (220°C) for 15-20 minutes or until golden and crispy.
Cook the steak bites:
While potatoes bake, heat a skillet over medium-high heat. Melt butter and add minced garlic. Quickly add steak cubes, seasoning with salt and pepper. Cook for 3-5 minutes, turning until steak is browned and cooked to your preference.
Serve:
Plate the garlic butter steak bites alongside the cheesy smashed potatoes. Garnish steak with fresh parsley and sprinkle chives on potatoes if desired.
