Preheat your oven to 180°C (350°F). Grease and flour a cake pan (about 20 cm / 8 inches).
Mix wet ingredients:
In a large bowl, beat the eggs, vanilla sugar, pinch of salt, and sugar together until light and fluffy. Slowly add the sunflower oil and mix well.
Add dry ingredients:
Sift the flour and baking powder into the wet mixture. Gently fold until just combined and smooth.
Bake:
Pour the batter into the prepared cake pan. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
Cool and serve:
Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Dust with powdered sugar or add your favorite glaze if desired.
