Preheat oven to 200°C (390°F). Line a baking tray with parchment paper.
Prepare the filling: In a bowl, whisk the eggs. Add chopped spring onions, grated Parmesan, salt, and pepper. Mix well.
Roll out the puff pastry into a thin sheet on a floured surface.
Spread the filling evenly over one half of the pastry. Fold over the other half to cover the filling.
Seal the edges by pressing with a fork.
Whisk the egg yolk with milk and brush the top of the pastry.
Bake in the preheated oven for 25–30 minutes, or until golden and crispy.
Cool slightly before slicing and serving.
