Separate the Eggs
Carefully separate the egg whites from the yolks. Keep yolks whole and set aside.
Whip the Egg Whites
Whip egg whites with a pinch of salt until stiff peaks form.
Create Cloud Nests
On a parchment-lined baking tray, spoon the egg whites into 4 cloud-like nests.
Make a small dent in the center of each nest.
Bake the Whites
Bake at 180°C (350°F) for 3 minutes.
Add the Yolks
Gently place one yolk into the center of each nest and return to the oven for another 3 minutes, or until set.
Mash the Avocado
While the eggs bake, mash the avocado with salt, pepper, and optional lemon juice.
Assemble & Serve
Spread avocado mash on toast or plate, top with the egg clouds.
Garnish with herbs or chili flakes if desired.
