Preheat your oven to 180°C (350°F) and line a baking tray with parchment paper.
In a mixing bowl, cream the butter and powdered sugar together until smooth and fluffy.
Add the oil, egg, and vanilla sugar (or extract), mixing well.
Sift the flour, salt, and baking powder into the bowl, then gently fold the dry ingredients into the wet until just combined.
Roll the dough into small balls and place them on the baking tray, flattening each slightly.
Bake for 12-15 minutes, until the edges are lightly golden. Remove and cool completely on a wire rack.
Once cooled, dip each biscuit halfway into melted chocolate and sprinkle with shredded coconut. Let the chocolate set before serving.
