Preheat the oven to 180°C (350°F).
Core the apples, making sure to leave the bottom intact to hold the filling.
In a small bowl, mix honey, cinnamon, nutmeg, cloves, and ginger.
Place the apples in a baking dish and fill the centers with the honey-spice mixture. If using, add chopped nuts on top.
Place a tablespoon of butter on each apple.
Pour the water or apple juice into the baking dish to keep the apples moist while baking.
Bake for 25-30 minutes or until the apples are tender and golden.
Serve warm, optionally with vanilla ice cream or whipped cream.
