In a bowl, combine the grated eggs, drained canned fish, mayonnaise, and seasonings. Mix well.
Lay out one pita bread sheet. Spread half of the mixture evenly across the surface.
Sprinkle a portion of grated cheese over the layer.
Place the second pita on top and repeat the process with the remaining filling and cheese.
Roll the pita tightly into a log. Wrap in plastic wrap and chill for 30–60 minutes to help it hold its shape.
Slice into rounds and serve cold or lightly warmed in the oven.
