1 ripe pineapple (cut into chunks)
1-inch piece fresh ginger (peeled and grated)
2 medium carrots (peeled)
Juice of 1 lemon (freshly squeezed)
½ to 1 cup of water or coconut water (to blend)
How to Make
Prepare: Cut pineapple, peel and chop carrots, grate ginger, squeeze lemon.
Blend: Add everything to a blender. Pour in water or coconut water and blend until smooth.
Strain (optional): Use a fine mesh strainer or cheesecloth for a smoother juice.
Serve: Pour into a glass, add ice if desired, and garnish with lemon or mint.
