Preheat oven to 180°C (350°F).
In a small bowl, combine milk and lemon juice; let sit for 5 minutes to curdle.
In a large bowl, mix ground beef, onion, garlic, breadcrumbs, egg, milk mixture, salt, and pepper until just combined.
Shape mixture into a loaf and place in a baking dish.
Mix ketchup, brown sugar, and mustard to make the glaze. Spread evenly over the meatloaf.
Bake for 60-70 minutes, until meatloaf is cooked through.
While meatloaf bakes, heat olive oil in a large pan over medium heat.
Fry potatoes until golden and nearly tender, about 15 minutes.
Add mushrooms and onions, cook until soft and caramelized, about 10 minutes more. Season with salt and pepper.
Serve meatloaf sliced with fried potatoes, mushrooms, and onions on the side.
