Heat a large skillet over medium heat and add the ground beef. Cook until browned, breaking it apart with a spoon. Drain excess fat if needed.
Add chopped onion to the skillet and sauté until softened and translucent.
Stir in diced sweet potatoes and cook for about 10 minutes, stirring occasionally, until they begin to soften.
Add diced zucchini and continue cooking for another 5–7 minutes until all vegetables are tender.
Season with salt, pepper, and any herbs of your choice (thyme or rosemary work well). Mix well and cook for another 2 minutes.
Serve hot as a satisfying, balanced meal.
