Heat 1 tablespoon vegetable oil in a large skillet or wok over medium-high heat.
Add chopped onion and minced garlic, sauté until fragrant and translucent.
Add ground beef, cook until browned and fully cooked, breaking it apart with a spatula. Drain excess fat if needed.
Push beef mixture to one side of the pan and add beaten eggs to the other side. Scramble eggs until cooked through.
Mix eggs with beef and onions.
Add the cooked rice to the pan, stirring well to combine all ingredients.
Stir in frozen peas and carrots, cook until heated through.
Pour soy sauce over the rice mixture and stir to evenly coat.
Season with salt and pepper to taste.
Garnish with chopped green onions if desired and serve hot.
