Preheat the oven to 180°C (350°F) and grease a 9x13 inch baking dish.
In a large bowl, mix the cooked chicken, soup, sour cream, and chicken broth.
Add vegetables (if using) and spread the mixture evenly in the baking dish.
In a separate bowl, mix stuffing mix with melted butter and 1/2 cup hot water until moistened.
Spoon the stuffing evenly over the chicken mixture.
Cover with foil and bake for 25 minutes.
Remove foil and bake for another 10–15 minutes until golden and bubbly.
Garnish with parsley before serving.
