Prepare the dough: In a bowl, combine flour and salt. Add melted butter and milk. Knead until you get a soft, non-sticky dough. Cover and let it rest for 15–20 minutes.
Make the filling: In another bowl, mix mashed potato with salt, pepper, garlic powder, chili flakes, and herbs.
Divide the dough into two equal balls. Roll each into a round disk (~15 cm).
Place the potato filling and mozzarella in the center of one disk, spreading it evenly but leaving a border. Cover with the second dough disk and seal the edges well.
Heat a nonstick pan over medium heat. Brush with a little oil or butter.
Cook the bread on one side until golden and crisp (about 3–4 minutes), then flip and repeat. Gently press the edges to ensure even cooking.
Once both sides are golden and the cheese has melted, remove and slice.
