In a large bowl, dissolve sugar and yeast in warm water. Let sit for 10 minutes until foamy.
Add flour and salt. Mix and knead into a soft dough. Cover and let rise for 1 hour.
Meanwhile, sauté the chopped onion in a little butter until soft. Add spinach, season with salt and pepper, and cook until moisture evaporates. Let cool.
Divide dough into 6 equal balls. Roll each ball into a thin circle.
Brush melted butter between each rolled dough layer, stacking 3 layers at a time (you will have 2 stacks).
Spread spinach mixture over one stack. Cover with the second stack.
Tuck edges in and flatten slightly. Place in a greased baking tray.
Brush top with beaten egg (optional) for golden color.
Bake at 200°C (390°F) for 25–30 minutes or until golden and crisp.
Let cool slightly before slicing and serving.
