Preheat your oven to 225°F (110°C).
Wash and core the apples. Using a mandoline or a sharp knife, slice them very thinly (about 1/8 inch thick).
Toss the apple slices in a bowl with lemon juice to prevent browning.
Optionally, sprinkle with cinnamon and sugar for extra flavor.
Arrange the slices in a single layer on a baking sheet lined with parchment paper.
Bake for about 1.5 to 2 hours until the apples are dry and crispy, flipping them halfway through baking.
Let cool completely before serving.
