Preheat oven to 350°F (175°C).
Peel and cut the sweet potato into chunks. Boil in water until fork-tender (about 15 minutes). Drain and mash until smooth.
In a large bowl, combine the mashed sweet potato with sugar, condensed milk, melted butter, eggs, cinnamon, nutmeg, and vanilla. Mix well until smooth and creamy.
Pour the mixture into the pie crust.
Bake for 50–60 minutes, or until a knife inserted in the center comes out clean.
Let cool before slicing and serving.
