Peel and boil the potatoes until soft. Drain and mash them well.
In a pan, heat a little oil and sauté the garlic until fragrant. Add the spinach and cook until wilted. Drain excess liquid and chop finely.
Mix the mashed potatoes, spinach, sautéed garlic, a handful of grated Parmesan, and a splash of milk to create a soft but moldable mixture.
Take small portions of the mixture, flatten them on your palm, place a piece of diced mozzarella in the center, and shape into balls enclosing the cheese inside.
Roll each ball in breadcrumbs to coat evenly.
Heat oil in a deep pan or fryer and fry the balls until golden and crispy on all sides. Drain on paper towels.
Serve warm, garnished with extra Parmesan if desired.
