Preheat your oven to 180°C (350°F) and grease a muffin tin with olive oil.
Fry the diced potatoes in a pan with olive oil until golden and tender. Season with salt and pepper.
In a large bowl, beat the eggs. Add the cooked potatoes, diced paprika, chopped spring onions or chives, corn, sausage slices, and 100 g of grated cheese. Mix well.
Spoon the mixture into the muffin tins, filling each about ¾ full.
Sprinkle the remaining 50 g of cheese on top of each muffin.
Bake for 20–25 minutes, or until the muffins are set and golden on top.
Let cool slightly before removing from the tin.
