Tuscan Garlic Chicken & Roasted Potatoes with Creamy Mushroom Pesto Rosso

8 oz cremini mushrooms, finely chopped

2 tbsp olive oil

2 cloves garlic, minced

ΒΌ cup sun-dried tomatoes (oil-packed), drained and chopped

ΒΌ cup fresh basil leaves

ΒΌ cup heavy cream

2 tbsp grated Parmesan cheese

1 tbsp lemon juice

Salt & freshly cracked black pepper, to taste

Instructions
1. Marinate & Grill the Chicken:

Toss chicken pieces with olive oil, minced garlic, oregano, thyme, salt, and pepper.

Heat a grill pan or skillet over medium-high heat.

Grill or sautΓ© chicken for 3–4 minutes per side until cooked through and lightly charred. Set aside.
