1️⃣ Toast the bread slices until golden and crisp.
2️⃣ Scoop out the avocado into a bowl. Mash with lemon juice and salt to taste. Spread evenly over the toasted bread.
3️⃣ Fry or poach the eggs to your preferred doneness (about 2–3 minutes for runny yolks). Season with salt and pepper.
4️⃣ Top each toast with the egg(s). Spoon the chopped heirloom tomatoes over the eggs. Drizzle with olive oil.
5️⃣ Sprinkle toasted pine nuts, chili flakes or black pepper, and fresh herbs over the top.
6️⃣ Serve immediately while warm with jammy yolks.
