2–3 eggs (fried or poached, as preferred)
⅓ cup heirloom cherry tomatoes, chopped or halved
2 tbsp pine nuts, lightly toasted
1 tbsp olive oil
½ tsp chili flakes or black pepper
Salt, to taste
1 tsp lemon or lime juice
Fresh parsley or basil, chopped (for garnish)
