Silky Dark Chocolate Pudding with Agar Agar

In a saucepan, combine the milk and sugar. Heat gently over medium heat until the sugar dissolves, stirring occasionally.

Sprinkle the agar agar powder evenly into the warm milk and whisk thoroughly to avoid clumps.

Bring the mixture to a gentle boil, stirring constantly, then simmer for about 2 minutes to activate the agar agar.

Remove from heat and add the chopped dark chocolate. Stir until fully melted and smooth.

Pour the pudding mixture into serving glasses or ramekins.

Allow it to cool to room temperature, then refrigerate for at least 2 hours until set and silky.
