Preheat your air fryer to 180°C (350°F).
Cut each tortilla into halves or quarters depending on the desired cannoli size.
Brush each piece lightly with melted butter on both sides.
Mix sugar and cinnamon together and sprinkle over both sides of the tortillas.
Place the tortillas in the air fryer basket in a single layer (work in batches if needed). Air fry for 5-7 minutes or until crisp and golden, flipping halfway. Remove and let cool.
In a bowl, combine ricotta, mascarpone, powdered sugar, and vanilla extract until smooth. Fold in chopped pistachios.
Once the shells are cool, spoon or pipe the filling into each shell.
Optionally, garnish with additional pistachios or a dusting of powdered sugar.
