Preheat your oven to 220°C (425°F) and line a baking sheet with parchment paper.
In a large bowl, whisk together the flour, baking powder, salt, and sugar (if using).
Cut the cold butter into the flour mixture using a pastry cutter or your fingers until it resembles coarse crumbs.
Gradually add the milk, stirring gently until the dough just comes together. If the dough is too dry, add a little more milk, one tablespoon at a time.
Turn the dough out onto a floured surface and knead lightly 5-6 times until smooth. Do not overwork.
Roll the dough out to about 1-inch thickness. Use a biscuit cutter or a round glass to cut out biscuits. Place them on the prepared baking sheet.
Bake for 12-15 minutes or until golden brown on top. Remove from the oven and brush with melted butter if desired.
