Prepare the Sauce:
In a small bowl, mix together mayonnaise, Dijon mustard, honey, and lemon juice. Cover and refrigerate until ready to use.
Season the Chicken:
Rub the chicken breasts with paprika, garlic powder, onion powder, salt, and pepper. Drizzle with olive oil or melted butter.
Cook the Bacon and Mushrooms:
In a skillet, cook bacon until crispy. Remove and drain. In the same pan, sauté mushrooms until golden brown. Set both aside.
Cook the Chicken:
Grill or pan-sear chicken breasts over medium heat for about 6–7 minutes per side or until cooked through.
Assemble and Bake:
Preheat oven to 180°C (350°F). Place chicken breasts in a baking dish. Spread 1–2 tablespoons of honey mustard sauce on each. Add sautéed mushrooms, top with bacon, then cover with shredded cheese.
Bake:
Bake for 10–15 minutes or until the cheese is fully melted and bubbly.
