Ingredients
1 lb Italian sausage
2 bell peppers, sliced
1 large onion, sliced
3 cloves garlic, minced
2 tbsp olive oil
1 tsp dried basil
1 tsp dried oregano
Salt and pepper, to taste
4 large potatoes, peeled and cubed
1/2 cup milk
2 tbsp butter
1/4 cup grated Parmesan cheese
How to Make
Heat the olive oil in a large skillet over medium heat. Add the Italian sausage, breaking it into small pieces as it cooks. Brown the sausage thoroughly.
Add the sliced bell peppers and onions to the skillet. Cook until the vegetables are tender and slightly caramelized.
Stir in the minced garlic, dried basil, and dried oregano. Cook for an additional minute until fragrant. Season with salt and pepper to taste.
Meanwhile, place the cubed potatoes in a pot of salted water and bring to a boil. Cook until the potatoes are tender when pierced with a fork, about 20 minutes.
Drain the potatoes and mash them together with milk, butter, and grated Parmesan cheese until smooth and creamy.
Serve the sausage and pepper mixture hot over a generous bed of garlic mashed potatoes.
