Bright and Fluffy Lemon Cream Scones for Every Occasion

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

In a large bowl, whisk together flour, sugar, baking powder, and salt.

Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

In a separate bowl, whisk cream, eggs, vanilla extract, lemon zest, and lemon juice.

Gradually add the wet ingredients to the dry mixture, stirring gently until just combined. Do not overmix.

Turn the dough onto a floured surface and gently knead 2-3 times to bring it together.

Pat the dough into a 1-inch thick circle and cut into 8 wedges.

Place wedges on the prepared baking sheet and brush tops lightly with additional cream.

Bake for 18-22 minutes or until golden brown.

Remove and cool slightly before serving.
