Ingredients
1 large beetroot (grated or boiled and chopped)
1 large carrot (grated)
1 tbsp olive oil
1/2 lemon, juiced
1 tsp honey (optional)
Salt and black pepper, to taste
How to Make
Grate or finely chop the beet and carrot into a mixing bowl.
Add olive oil, lemon juice, honey (if using), salt, and pepper.
Toss gently until well combined.
Chill for 10–15 minutes or serve immediately as a fresh side dish.
