Preheat and prepare:
Preheat your oven to 170°C (340°F). Line a baking sheet with parchment paper.
Mix wet ingredients:
In a large mixing bowl, whisk the egg, powdered sugar, mayonnaise, and softened butter until smooth and creamy. Add vanilla extract and mix well.
Add dry ingredients:
In a separate bowl, sift together the flour, baking powder, and salt. Gradually add this to the wet mixture, stirring gently to form a soft dough.
Shape the cookies:
Roll small portions of the dough into balls (about 1 inch in diameter) and place them on the prepared baking sheet, spacing them about 2 inches apart. Flatten gently with a fork or your fingers.
Bake:
Bake for 10–12 minutes, or until the edges are just lightly golden. Do not overbake—these cookies should remain pale and soft.
Cool and dust:
Let the cookies cool on the tray for 5 minutes before transferring to a wire rack. Once cooled completely, dust with powdered sugar if desired.
