Savory Alice Springs Chicken with Bacon and Cheddar

Preheat your oven to 375°F (190°C).

Lay out the bacon slices on a baking sheet and cook partially until they are just starting to crisp but still flexible, about 5 minutes. Remove and drain on paper towels.

Season the chicken breasts with salt and pepper to taste.

Wrap each chicken breast evenly with two slices of the partially cooked bacon.

Place the bacon-wrapped chicken breasts in a baking dish.

Bake for 25 minutes, then remove from the oven and sprinkle shredded cheddar cheese generously over each piece.

Return to the oven and bake for an additional 5–10 minutes or until the chicken is cooked through (internal temperature 165°F / 74°C) and the cheese is melted and bubbly.

Let the chicken rest for a few minutes before serving.
