Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Roll out the puff pastry sheet slightly on a floured surface.
Spread Dijon mustard evenly over the pastry if using.
Sprinkle the chopped bacon and shredded cheddar cheese over the pastry, leaving a small border. Season with salt and black pepper.
Carefully roll the puff pastry sheet into a tight log.
Slice the log into 1/2-inch thick rounds and place them on the baking sheet, spaced apart.
Beat the egg and brush the tops of each round with egg wash for a golden finish.
Bake for 12-15 minutes or until puffed and golden brown.
Let cool slightly before serving.
