Preheat your oven to 180°C (350°F) and lightly grease a baking dish.
In a large bowl, combine rolled oats, grated carrots, mashed banana, cinnamon, and vanilla extract.
Gradually add almond milk while mixing until you get a moist batter. Stir in nuts or raisins if using.
Pour the mixture into the prepared baking dish, spreading evenly.
Bake for 25-30 minutes or until the top is golden and firm.
Remove from the oven and let cool slightly before slicing into portions.
