No-Bake Vegan Protein Bites with Banana and Dried Fruit

Soak the Fruits:

Soak the raisins and apricots in hot water for about 10 minutes. Rinse and drain well.

In a large mixing bowl, combine the oats, soaked raisins, soaked apricots, walnuts, and almonds.

Add the Binder:

Mash the banana in a separate bowl until smooth, then stir it into the dry mixture.

Add the honey if using. Mix everything well until the ingredients come together like a dough.

Form the Bites:

Using your hands, form small balls or press the mixture into a lined baking dish to make bars.

Refrigerate for at least 1 hour to firm up.
