Preheat the oven to 180°C (350°F).
Peel, core, and slice the apples. In a pan, melt the butter and add the apples with 40 grams of sugar. Cook on medium heat until the apples soften but do not turn mushy. Set aside to cool.
In a mixing bowl, whisk the eggs with vanilla sugar, a pinch of salt, and 130 grams sugar until light and fluffy.
Add the milk and yogurt (or sour cream) to the egg mixture and mix gently.
Gradually sift in the flour and baking soda, folding them into the batter carefully to avoid lumps.
Pour half the batter into a greased baking pan. Layer the cooked apples evenly on top.
Pour the remaining batter over the apples, spreading gently to cover.
Bake for 40-45 minutes, or until a toothpick inserted in the center comes out clean.
Once baked, drizzle honey over the warm pie and sprinkle coconut flakes on top for garnish.
