Ingredients:

150g (1 cup) carrot, diced into ½ inch cubes
150g (1 cup) red bell pepper, diced into ½ inch pieces
250g (2 cups) zucchini, cut into 1 inch cubes
1½ tablespoons garlic, finely chopped (about 3 to 4 cloves)
1 can (400g) chickpeas, drained and rinsed
