Hearty Kielbasa Soup with Potatoes

In a large pot, heat olive oil over medium heat. Add sliced kielbasa and cook until browned, about 5 minutes. Remove and set aside.

In the same pot, add onions, carrots, celery, and garlic. Sauté until softened, about 5 minutes.

Add diced potatoes, chicken broth, diced tomatoes, smoked paprika, thyme, salt, and pepper. Stir well.

Bring to a boil, then reduce heat and simmer for 20 minutes or until potatoes are tender.

Return kielbasa to the pot and cook for another 5 minutes to heat through.

Adjust seasoning if needed. Garnish with fresh parsley before serving.
